Buttermilk Biscuits

1 ½ c
Flour

2 tsp
Baking Powder

¼ tsp
Baking soda

½ tsp
Salt

¼ c
Shortening
-
¾ c
Buttermilk
Mix dry ingredients, then blend in shortening and
buttermilk. Roll into ½” sheet.
Cut out biscuits with cutter or top of cup.
Place on nonstick cookie sheet, edges touching.
Bake 450º about 10 minutes, or until brown.

Nutmeg

Butter

Confection sugar

Lemon juice
Preheat oven to 425º.
Combine flour, milk, egg, and nutmeg.
Beat slightly leaving slightly lumpy.
Melt butter until very hot in pan. Pour
batter into hot butter and bake 15-20 minutes.
Sprinkle with sugar, drizzle with lemon juice, serve.
Applesauce Pancakes

2 c Dry Pancake Mix

1 tsp Ground Cinnamon

2 Eggs
-
1 c Applesauce
-
1 tsp Lemon Juice

1/2 c Milk
In a large Bowl, stir together pancake mix and cinnamon.
Make a well in the center of the pancake mix. Add the eggs, applesauce,
lemon juice and milk; stir until smooth. Heat a lightly
oiled griddle or frying pan over medium high heat. Pour or scoop the
batter onto the griddle, using approximately 1/4 cup for each pancake.
Brown on both sides and serve hot.

3/4 cups whole wheat flour

1/2 cup all purpose flour

1/2 cup oats

1/4 cup corn meal
-
1/4 cup Bran (optional - increase buttermilk a little if
you add)

1 1/2 teaspoon baking powder

1 teaspoon baking soda
-
Generous dash nutmeg
-
1/3 cup cold butter, cut into pieces
Mix all this until it is like a course meal -
I haven't tried this recipe yet, and the instructions
weren't with it, so I'll update this once I've figured it out!
